Mason Jar Meals

Disclaimer: these really aren’t meals, but more like delicious snacks or small meals

Second semester of senior year is off to a great start so far. It’s not that I’m trying to care less, but I am simply trying to make more time for self-care. When I have time, which I’m trying to make more of, I enjoy trying out new recipes in the kitchen. Albeit the fact that I am not very good at cooking, I try my best, and when I get something right and it is delicious, a huge smile lights up my face and I get super giddy and geek out over the tiny little thing that I’ve made. I’m easily excited, if you couldn’t tell.

Without further ado, here are two mason jar meals/snacks that I’ve made recently that are perfect to take on the go and are easy to prep.

Meal #1: Overnight Oats

I honestly decided to try this out because it looked super cool before you shake it up. This is a delicious little treat! I’m sure there are multiple variations on this, and hopefully all of them are just as yummy as the one that I made.

Recipe

1/2 cup of oats (I used instant oats)

1 tablespoon of chia seeds

1/2 cup of yogurt (recipe calls for Greek, I used regular because I didn’t have Greek)

1 tablespoon of honey

1 teaspoon of vanilla extract (I didn’t have vanilla either, so I used maple syrup)

1/2 cup to 3/4 cup of almond milk (I substituted for what I had, which was cashew milk)

Shake so that all ingredients are evenly mixed, refrigerate overnight, and voila! You have your overnight oats. Feel free to top them with fruit, nuts, seeds, or whatever your little heart desires.

Meal #2: Banana, Spinach and Avocado Green Smoothie

I’ve been trying different variations on green smoothies in an attempt to get a little healthier, and this one is delicious! I had several ripe bananas, a whole tub of spinach, and half an avocado left over from making a burrito bowl, so I figured this would be perfect to make for a quick breakfast

Recipe

1 sliced banana

1/2 an avocado

1/2 cup of fresh spinach

1/2 cup of milk (I used regular skim)

6 ice cubes

2 teaspoons of honey

1 teaspoon of vanilla extract (I didn’t have vanilla [again], so skipped it and just added a little more honey)

Blend up!
